This product has for centuries been used as a means to break the fast. It can be served as a soup on its own, or with added beef, lamb or chicken. Vegetables can also be added. The sour milk helps to ease the stomach back into non-fasting foods after a long period of fasting. This soup is called Trahanas in Greece, Tarhana in Turkey, and it is similar to Keshkek in Armenia and Harissa in Syria, Iraq and Lebanon. It is traditionally prepared on Pascha (Easter) Sunday, Nativity (Christmas) Day, Apostle Peter's Day and Dormition Day, all four feasts of which take place at the conclusion of a legthy fast.
